Easy 15-Minute Recipe: Pan Roasted Chicken And Vegetables

Continuing our „Easy 15-Minute Recipe” series where we are introducing healthy recipes that are quick and easy to make yet still delicious, this time we are going to show you all an easy to make lunch idea: Pan Roasted Chicken And Vegetables!

This is the kind of dish that you can just throw together quickly for either lunch or dinner, when you either don’t have much time or are feeling a little lazy. It requires minimal effort or skills, so anybody can prepare it without having to be afraid of messing it up.

Furthermore, it doesn’t require special ingredients: most of the things you probably have at home already and you can always slightly adjust and improvise. We will recommend vegetables to use, but it is definitely no problem to leave out one and add another. The most important thing is the concept itself: making delicious roasted chicken and veggies, a healthy and balanced meal that helps you avoid deep frying or loading up on bad carbs.


  • 500g boneless chicken breast (about two medium sized breasts) – for 2 servings
  • 2 tablespoons olive oil
  • ½ teaspoon salt and pepper
  • ¼ teaspoon oregano
  • ½ teaspoon garlic powder / 1-2 cloves of garlic

Vegetables we recommend:

  • Bell peppers (red, yellow or green are all fine)
  • Zucchini
  • Onion
  • Broccoli
  • Grape tomatoes
  • Baby carrots
  • Green beans

How to prepare this dish?

First of all you will need to preheat your oven to 200°C. While the over is warming up, line a pan with a baking sheet.

Secondly, cut up the chicken breast. Try to cut it into bite sized pieces that are not too big –you want to make sure each piece will cook evenly. Remember to use a separate knife and cutting board for the chicken or clean properly before cutting the vegetables using the same tools.

This step is not necessary, but if you have a little bit more time, you can marinate the chicken the night before to give the dish an extra nice flavor. In a food container, mix the chicken cubes with olive oil and your favorite seasonings (or you can use the same spice mixture we are going to use for the pan) and leave it in the fridge overnight.

Next, chop up all your vegetables. Again, try to go for bite-sized pieces so that everything cooks evenly. We did not give exact measurements for the vegetables since this is a recipe you can customize yourself, based on what veggies you have at home, which ones you like and dislike and how many people you are preparing this dish for.

Once you have everything cut up, place them in your pan on the baking sheet and add the olive oil and the seasonings then toss and combine them.

Lastly, put the pan in the oven and bake it for about 15 minutes, until everything is cooked. Serve it while it’s still hot.
